White kombu is a very thin kombu often used when making Mackerel sushi. It's made through an intricate process whereby dried kombu is first marinated in vinegar and then sliced incredibly thinly without any holes by only the most skilled professionals.

In addition to its unique flavour, Shokunin Shiroita is also prized for its clarity, which makes it an attractive ingredient for dishes where visual appeal is important, such as in sushi rolls or clear soups.
