This Hon Tamari soy sauce appears on the surface of hatcho miso when it matures naturally, after 18 long months. You only get 3-5L of this sauce for every 1000kg of hatcho miso! So this is super rare.
Umami in soy sauce comes from the % of nitrogen. Regular soy has 1.2%, premium soy 1.4% and special grade soys sometimes reaching 1.6%. This has a stunning 3.4% making it one of the most umami packed soys we offer.
Hon Tamari soy sauce has a unique flavour profile that is different from other types of soy sauce. It has a milder and less salty taste, with a deeper umami flavour that is often described as meaty or savoury. It is often used as a seasoning for various dishes, such as sushi, sashimi, and stir-fries!
