Hinode, Real Hon Mirin 13%vol, 20L
As seen on: James Martin's Saturday Morning.
Mirin is a type of sweet rice wine popular in Japanese cuisine with 14% alcoholic volume. It is produced in a similar manner to sake, but using glutinous rice (rather than polished sake rice) in the mash. The difference of grain in the mash mixture (moromi) results in less of the natural sugars converting to alcohol. This produces a lower alcohol content and a higher sugar content, creating a sweet-tasting rice wine, with a slight acidity. Used my many of our Michelin Starred clients to add complex sweetness as a pose to sugar.
Known for its mellow sweetness and subtle flavour, and it is often used in marinades, sauces, dressings, and glazes for meat, fish, and vegetables. It also helps to tenderise and add a glossy finish to the food!
