This Hon Tamari soy sauce is an exceptionally rare condiment that forms naturally on the surface of Hatcho miso during its 18-month maturation process. With only 3 to 5 litres yielded per 1,000 kilograms of miso, its rich umami flavour boasts a nitrogen content of 3.4%, significantly higher than standard soy sauces.
