Spicy miso chicken is a delicious appetiser for any dinner or event. The chicken drumettes feature a blend of sweet and savoury flavours paired with a spicy miso dipping sauce.
This dish can be made in less than an hour and takes just a few basic ingredients you may already have in your pantry. The recipe calls for drumettes but you can substitute for drumsticks. The sauce can also be altered if you prefer it more spicy or less spicy by increasing or decreasing the amount of kimchi sauce.
HOW TO MAKE SPICY MISO CHICKEN
If you don’t mind a little spice, then you’ll love spicy miso chicken. Serve these tulip-shaped drumettes with a spicy miso dipping sauce as an appetiser to your meal.
INGREDIENTS
- 270g chicken drumettes
- 5ml neutral-flavoured oil
For Seasonings:
- 15ml sake
- 2.5g ginger
- 1 clove garlic
For Spicy Miso Sauce:

- Cut and remove the meat from the tip of the bone on the drumettes using kitchen shears. When the meat is removed halfway, peel it back to create a “tulip” shape.
- Combine the sake, ginger, and garlic in a small bowl.
- Put the chicken drumettes into a resealable plastic bag and pour in the seasoning mix. Rub the outside of the bag to fully coat the chicken pieces with the seasonings. Refrigerate for approximately 30 minutes.
- Heat the grill to 290°C (550°F) or as close to that as you can get it. Line a baking sheet with tin foil and lightly brush with oil to prevent sticking. Place the baking sheet about 20cm (8”) from the heating element. Cook until the chicken is brown and crispy, or about 10 minutes. Flip the chicken to the other side and cook for an additional 10 minutes.
- In a medium bowl, combine the miso, mirin, and kimchi sauce to create the spicy miso sauce. You can apply the sauce directly to the chicken or serve it in a bowl with the drumettes.
